Joon
Joon (Chef and Owner) is the creative and philosophical force behind the restaurants identity, guiding every element from culinary to guest experience with intention, precision and vision. He comes from a diverse culinary background with extensive experience in French, Italian and Japanese cuisines. His idea behind Hikari is to fuse Izakaya, the Japanese pub experience, and Washoku, traditional Japanese food. Hikari pays homage to these traditions whilst giving every meal a slight tweak to make the menu approachable for all.
Hojin
Hojin (Head Chef) has been an integral part of Hikari since its very beginning, working side by side with the owner to shape the restaurants identity, standards and culinary experience from the opening day. Born in Korea and deeply influenced by both Korean and Japanese culinary traditions, he brings a unique cultural perspective to the kitchen, rooted in discipline, respect for ingredients and a profound appreciation for balance and nuance.
